Winter Dessert Pairing

Our Winter Dessert is a work of passion and play, created by our Roasters and Chefs to hero our Winter Seasonal Espresso tasting notes of blueberry, chocolate ganache and sugar plum.

Leading with blueberry, a smooth and sweet coulis builds a dynamic canvas for the dessert. Using a cherrywood wood chip, the velvety chocolate cheesecake is infused with a smoky aroma – maintaining the highs of the fruit while adding a richness to the creamy flavour that melts in your mouth.

Small dollops of smooth Winter Espresso chocolate ganache are piped onto the cheesecake and topped with a crisp coffee tuille for a delicious biscuity snap.

For the final tasting note, sugar plum is stewed and emulsified to a fine syrup then left to cool overnight, creating a thin sugar plum leather, reminiscent of childhood candied fruit. Dusted with freeze-dried raspberries and edible flowers, this Winter delight will keep you and your Winter coffee of choice in good company throughout the season.
