The Las Llantas farm is named for the tires placed at the entrance welcoming visitors to sit and take in the views of the Apaneca-Ilamatepec mountain range in El Salvador. Second generation owner Jose Enrique Gutierrez has become known for his strong focus on sustainability in his farming and for producing high-quality coffees.
This lot is processed with the unique anaerobic natural process where the cherry is handpicked at peak ripeness, carefully hand sorted and then fermented in airtight bags for 72 hours before being sundried for over 30 days.
We have developed the roast profile to create balance between the sweetness and acidity of this coffee by extending the drying and maillard phases, resulting in a velvety mouthfeel and citric acidity. This is the first time we’ve purchased this lot and we only have a limited amount of this wonderful coffee to roast through the summer.
