Process Higlight

What Is The Thermo Shock Process?

The process starts with picking and sorting the cherries, after which they are anaerobically fermented twice. The first ferment lasts for just over two days, after which the cherries are de-pulped. The second fermentation follows, for just under five days, in a controlled bioreactor.

The most unique part of this process is the addition of yeast to the second fermentation, which produces enzymes which react with the sugars in the coffee, altering the chemical composition.

The reason this process is called Thermo Shock is because of what happens post-fermentation. The coffee is washed first in warm water, then in cold water, which targets the aroma compounds in the coffee – essentially locking in the flavours. Washed twice, the coffee is also impeccably clean, leaving the cup devoid of anything but the flavours of the coffee and the process.
