This single origin coffee has been decaffeinated using the Swiss Water Process (SWP), an entirely chemical free method of removing the caffeine from coffee. The SWP also goes to great lengths to retain the distinctive characteristics of the particular coffee being decaffeinated. This coffee comes from the Sidamo Province of Ethiopia (the two other growing areas are Yirgacheffe and Harrar) in the South East of the country.
