Meet Our Winter Single Origin Coffees

Each season, alongside our Espresso and Filter blends, we release a selection of single origins that reflect the environment around us. This Winter, we're pleased to showcase five single origins across four countries, each roasted to reveal its own distinct character.

From the rich, chocolate-driven comfort of Brazil and Timor-Leste to the vivid, fruit-forward expressiveness of Kenya and Colombia – these are coffees worth returning to, cup after cup.

Single Origin Espresso

Fazenda Santa Clara, Brazil
Rich and full-bodied

We're excited to welcome back Fazenda Santa Clara, a farm we've sourced from in previous years, and one we return to because it consistently delivers exactly what great Brazilian specialty coffee should be.

The Pereira family planted their first coffee trees on this land in 1900. Today, third-generation owners Moacyr Dias Pereira and Alayde Graciano Pereira run the farm alongside their four adult children, all of whom live on the property with their families. It is, in every sense, a family farm, and that continuity of care shows in the cup.

Santa Clara sits in the Mantiqueira de Minas region, an area defined by its high elevation, fertile soil and favourable seasonality.

The Yellow Topazio variety is processed as a natural, with gentle heat applied early in the roast and extended development through the latter half, a profile that enhances the fruit sweetness while preserving the richness the variety is known for.

A rich and syrupy espresso, with velvety chocolate notes and a stone fruit sweetness.

Brewing Notes

A 1:2 ratio helps emphasise the rich, indulgent body. Given the delicate acidity, this results in a balanced cup.

Single Origin Espresso

Sakoko, Timor-Leste
Syrupy and bold

Anaerobic Natural | Timor Hybrid, Catimor, Caturra, Typica | 1,400 masl

We featured this coffee in our recent Autumn Seasonal Blend and felt it was too good not to highlight on its own.

This microlot comes from Sakoko, a village in Ermera - a landlocked, mountainous region in the eastern part of Timor-Leste. Since gaining independence in 2002, Timor-Leste has steadily built a reputation for producing increasingly high-quality coffee. Coffee is grown without chemical fertilisers or pesticides and now accounts for approximately 90% of its exports.

The coffee is carefully sourced from farms around the Railaco mill and, after sorting, is fermented anaerobically for 48–72 hours. This controlled, oxygen-limited stage enhances flavour complexity. Post-fermentation, the cherries are dried in large greenhouse cocoons, covered with thick plastic sheeting to protect against the elements. Drying takes around 15 days to reach a stable moisture level of 10–12%.

This lot is a combination of Timor Hybrid, Catimor, Caturra, and Typica, which are often grown interspersed on farms.

Brewing Notes

A 1:2.2 ratio enhances the syrupy character of the espresso. Allowing a longer contact time helps unlock additional flavour complexity.

Nyeri Hills, Kenya
Sweet, expressive and complex

Washed | Batian, SL28, SL34, Ruiru 11 | 2,000 masl

Ownership of Nyeri Hills Farm dates back to the 1890s, when Kenya was still a British colony. First planted in 1914, it was among the earliest coffee plantations established in East Africa. Its large size remains unmatched in the region, and its wet mill, constructed in 1934, is still in operation today.

Both the Chania and Muringato rivers traverse Nyeri Hills Farm, with beautiful valleys covered in natural vegetation. The bush shrubs provide an alternative source of traditional medicine. To support environmental sustainability standards, both exotic and indigenous trees have been planted within the coffee fields in recent years. The planting of native grasses and trees in areas prone to erosion helps protect and maintain the land.

Typical of great Kenyan coffees, this lot is expressive, with blackberry and stone fruit notes. The high altitude and favourable microclimate, combined with careful handpicking and processing, result in a beautiful coffee.

Tastes Like

A crisp and clean expression of Nyeri coffee, with abundant blackberry and stone fruit notes, supported by a full-bodied cola sweetness.


Brewing Notes

A 1:17 ratio with a higher brew temperature works well, as this coffee is exceptionally clean and becomes sweeter and brighter at higher temperatures.

Single Origin Filter

José Oliveira, Brazil
Smooth and sweet

Natural | Acaia, Catuai | 1,250 masl

Fazenda Ondas de Mantiqueira was established in 1850. The farm’s current owner, José Nicácio Itagyba de Oliveira, oversaw its conversion to organic production, helping to protect both the soil and the waterways that pass through the property. Seven mineral springs criss-cross the farm.

The Mantiqueira region in Brazil differs from other growing regions in the country, with generally smaller producers, higher altitudes, and more diverse terrain. This results in fantastic coffees with more complex, fruit-forward flavour profiles. We’ve sourced from this farm in previous years and love highlighting just how good Brazilian specialty coffee can be.

Coffee cherries are selectively handpicked so that only ripe fruit is harvested - a rare practice in Brazil, where most coffees are mechanically harvested.

The farm has complete processing infrastructure to produce both fully washed and natural coffees. The farm’s drying terraces are carefully organised to ensure full traceability. Once harvested, the cherries are spread out to dry and turned frequently to promote even drying.

Tastes Like

This coffee offers delicate fruit sweetness with a smooth, balanced finish. Combined with a mellow, comforting milk chocolate body, it makes for an exceptionally drinkable cup.


Brewing Notes

A 1:16.5 ratio with a slightly finer grind will enhance the milk chocolate sweetness. Brazilian coffees tend to have delicate, lower acidity, and a shorter ratio helps mitigate excessive brightness, ensuring a sweet and balanced cup.

Finca Betania, Colombia
Tropical and vibrant

Washed | Chiroso | 2,000 masl

Finca Betania sits within a network of 117 smallholder producers in southern Huila, a region celebrated for its terroir and commitment to quality. Producers here share infrastructure, philosophy and standards: no chemicals, full traceability, and a collective investment in cupping labs, drying stations and centralised warehouses that allow each farm to produce at the highest level.

The Betania family has been growing coffee for over 80 years. After the 2014 coffee crisis, owner Linarco pivoted decisively toward specialty production, introducing Pink Bourbon, Chiroso, Geisha and SL28, and refining fermentation techniques that have since placed him among Colombia's most respected producers. Today he mentors young growers across the region and is an active voice for environmentally responsible farming.

Chiroso, once thought to be a genetic mutation of Caturra, has recently been identified as an Ethiopian landrace variety that somehow found its way into the mountains of Antioquia, Colombia. It is prized for offering the complex florality of a Gesha, often paired with a more substantial body and distinctive fruit notes.
