Each season, we bring you a limited release of exceptional single origin coffees – rare and remarkable lots we get to roast just a few times a year.

Spring's release showcases two Geshas from two different origins. While both are a high-end variety, their origins and differing processing methods mean you'll encounter two very unique tastes in your cup.

The Eloy Gutierrez from Colombia, and the Joel Villalta from Panama.

Originally from Caquetá, Eloy Gutiérrez moved to Timaná at the age of 15 to live and work alongside his father. In 2000, he acquired a small plot, Mi Refugio, where he began his journey as a coffee producer.

Eloy has learned that Gesha demands exceptional care and attention, and has found the variety performs best during cooler, wetter months, when higher mucilage content enhances its signature aromatics. He also maintains bee colonies, recognising the role pollinators play in improving plant health and fruit quality.

Silky and tea-like, this coffee is light on the palate with a bright, sparkling acidity that lifts quickly rather than lingering too long. Jasmine and coffee blossom at the start carry through to a clean, evolving finish, offering layers of complexity as the cup cools.

Roasting & Brewing Tips

Roasting note: Gesha sits on the Ethiopian Landrace branch of the coffee DNA tree, and as such benefits from a faster overall roast time to best highlight its vibrant florals.

Brewing note: Try starting with a 1:16 ratio and a coarser grind to highlight floral notes and increase flavour clarity.

Joel Villalta Gesha, Panama

This is the first year we have sourced this coffee, and we're very excited to have Panama Gesha back on the menu for the first time in quite a few seasons!

It was produced by Creativa Coffee District, or CCD, a forward-looking specialty coffee producer in Boquete, in the Chiriquí province of Panama. They've worked to transform a traditional wet mill and drying patio into a modern, state-of-the-art processing facility, and their approach likens processing coffee to art, with the cherries as their canvas.

This coffee has a rich, silky body, tropical fruit notes and crisp tartaric acidity, with a distinctive tart cherry note running through the whole drinking experience.

Roasting & Brewing Tips

Roasting note: Gesha sits on the Ethiopian Landrace branch of the coffee DNA tree, and as such benefits from a faster overall roast time to best highlight its vibrant florals. This particular lot requires more heat in the first half of the roast and a faster development time, to keep its cherry notes crisp and allow the tropical fruit notes to shine.

Brewing note: We recommend trying a 1:17 ratio and a coarser grind to keep the cherry notes as bright as possible. You could also try a cool bloom at 85°C for increased flavour clarity.
