Our first Reserve Collection of 2025 is a brand-new coffee to our roastery. Its unique processing method - champagne yeast, natural - is a specialized technique inspired by winemaking in France’s Champagne region. The result is a complex and unique flavour profile with enhanced fruit notes and a balanced body.

Please note: this coffee will be roasted and dispatched on the selected roast date. Anything ordered with this coffee, will be held to roast & dispatch together.

Where It's From

Finca Cascaritas is operated by third-generation coffee producer Delmy Hernandez, along with her son, Moises Herandez. Since 2015 they've been focused on producing high-quality microlots. They invested in building a solar dryer with three layers of African beds, to develop a time, temperature and humidity-controlled process for drying coffee.

The farm spans 3.5 hectares at an altitude of 1230 - 1300 meters above sea level and enjoys generous shade from a mix of Pine, Walnut, Hazel, Guamo and Malcinca trees. It's located in the Ocotepeque region, in the westernmost part of Honduras. Ocotepeque contains many natural features like the Cerro Pital Mountain, the Güisayote National Reserve, and the Pacayita volcano, creating diverse microclimates as well as a variety of habitats for flora and fauna. Combined with rich, fertile soil, it's an ideal area for coffee production.

Tastes Like

This coffee is sweet, soft and delicate, with notes of ripe strawberries and vanilla up front, followed by an intriguing cashew aftertaste. With rose and violet perfumed aromatics, it's an elegant cup created by a complex yet restrained fermentation process.

For filter brewing, we recommend a classic 1:16 ratio for this coffee.

Roaster's tip: If you’re brewing pourover, try a cold bloom with an initial 60g of 85 degree water, to bring out even more delightful floral notes.

Process Highlight

Champagne Yeast Natural

This process begins with selecting high-quality, ripe cherries that are then pulped to remove the outer skin. The mucilage-covered beans are inoculated with a specific yeast strain - typically Saccharomyces cerevisiae - and fermented under controlled conditions for 24 to 72 hours.

After fermentation, the beans are washed to remove any residue and dried on raised beds or patios. The result is a coffee with consistent quality and distinct, memorable flavours, allowing producers to showcase the unique terroir of their coffee.
